The Dillinger Room is a cocktail bar & eatery, with an intimate, speakeasy inspired atmosphere. Our focus is on ingredients, techniques, and execution. Since our opening in September of 2015, we continue to build our unique and creative approach to the cocktails and cuisine that we serve.
We are a young establishment that strives to grow and improve on a daily basis. Our short-term goals provide small successes that are critical in building a restaurant vision that surpasses the long-term goals that will build our future. Our team consists of New Brunswick locals and Rutgers alumni, Owner/Manager - Mike Simko, General Manager - Matthew Roseman, Bar Director - Bernard O'Connell, and Executive Chef, Calvin Hwang.
