The History of Lanzhou Hand-Pulled Noodles
Lanzhou Hand-Pulled Noodles, also knowns as beef noodles, originated from the city of Lanzhou, the source of Huang He River, the western plateau of China. It is said that they were sold in the streets of Lanzhou as early as the Han Dynasty and Tong Dynasty. The beef noodles then were called "hot pot."
During the period of Guangxu in the Qing dynasty, there was a Muslim named, Ma Bao Zhai, who seriously studied beef noodles and further made improvements on them. It has now become a light beef noodle soup. By the 1990s, Lanzhou's beef noodle soup has been sold all over China as well as every nation of Southeast Asia. The worldwide customers highly praised the distinctness of Lanzhou beef noodles.
